Shane and Belinda Simpson, of 2773 Cafe Glenbrook, have been chosen to run a proposed new cafe in the refurbished Emu Plains Police Cottage. The project is a joint undertaking by Penrith City Council and the NSW Government, intended to prolong the life of the heritage-listed building. The Simpsons intend the new venue to blend the iconic history of the building with a contemporary dining experience.
